2. See a Hero? Run

Unless you're shooting from afar and have a reasonable avenue of escape, taking on a hero from the front is never going to end well. In narrow interiors Luke Skywalker and Darth Vader are absolute tanks, being able to steamroll through the enemy at an alarmingly quick rate. Sharpshooters like Han, Leia and Boba are less adept in these closed off areas however, so if you are going to stay and fight these characters, it's best to do it where there's little room for them to manoeuvre. The opposite is of course true for the Jedi and Sith of the game though, as encirclement and long-range engagement is really the only way to safely takedown a force-user with minimal casualties. Running into one of these cinematic icons is never going to be pretty when you're on your own, so your best bet in those situations is to hightail it out of there and hope that your pursuer becomes preoccupied with something else in your immediate vicinity.
