2. Hasperat

Hasperate is a briny, spicy, pungent Bajoran vegetable dish not unlike weapons-grade kimchi or sauerkraut. It’s typically served in a kind of veggie wrap, though Ziyal once put it in a souffle because why not. It’s the quintessential Bajoran food and one of the best examples of culinary worldbuilding in Star Trek.

The Bajorans have a vastly ancient culture, far older than most other humanoid species in the Alpha Quadrant. They honor timeless traditions in the arts, religion, and, of course, cuisine, especially since much of their world was destroyed during the Cardassian occupation. Hasperat, then, is a key element of Bajoran identity.

But it also reflects how Bajorans, despite being a deeply spiritual people, appreciate a good fight. They love searing, tear-jerking hasperat for the same reasons they don’t back down, especially not from Cardassian military occupiers.

It’s ironic that something that takes such skill to cultivate and perfect is capable of inflicting so much pain – and that means both the Bajoran resistance and hasperat itself.
