With the serious nature of Breath of the Wild's main quest, it doesn't often introduce humorous moments. On the other hand, Super Mario Odyssey's wackiness is actually one of its most defining features.

By nature, Super Mario tends to include quite a bit of self-referential humour and likes to include characters and worlds that have a sense of whimsy. Super Mario Odyssey still manages to set itself apart from the others by really indulging in that humour and making the most out of it, which hasn't really been seen in other games.

A lot of this comes from the disturbing nature of having Mario possess his enemies and use their abilities, giving the game quite a sense of dark humour.

Comparing this to Breath of the Wild hardly seems fair. Link's adventure does have its funny moments, but it doesn't really compare. Having a good handle and respect for its tone is one of the best aspects of Super Mario Odyssey for sure.
